I’ve tried his cupcakes and cakes at cake love and I just wasn’t impressed.

I’ve had better cupcakes at my local grocery store (and cheaper too), so I just didn’t understand why he would come out with a cook book.

I find his cakes to be dry and crumbly, frostings to be mediocre.

For $3 a cupcake, I’d expect it to be made out of imported chocolate from Belgium or something. I checked out his book but I didn’t buy it…

I made the buttercream frosting. It was really good. The baking style in the book is too structured. Good frosting though.

As an experienced baker I was disappointed after trying one cake recipe from this book. I thought the ratio of sugar to flour was very high. The cake was very wet and stuck to the plate along with the taste being fair. Also, in the book there is only one recipe that requires cake flour which offers a better result for cake textures.

Granted, I’ve not tried all the recipes in this book, but 3 for 3 is not a good sign. I made the Banana Legs, Mojito and Lemon cakes, and they all seemed fine when they came out of the oven, but all collapsed as they cooled, into dense, dry, 1/2″ pancakes. And they didn’t taste good, either. I am an experienced baker, and noticed that there isn’t a lot of leavening in the recipes, but thought that the small amounts of baking soda, eggs, potato flour, etc., must be the trick. Clearly they are not. The recipes sound so good, and have different, creative ingrediants. Too bad they don’t make decent cakes!
